Most fryer calls come down to heat: it won't light, it won't hold, or the high-limit keeps tripping and shutting you down mid-service. I check the whole chain, gas supply and valve, pilot or ignition, thermostat and probe, high-limit, and on electric units the elements and contactors, so the fix actually holds instead of tripping again on Friday night.

Pilot, spark ignition, thermopile or flame-sensing faults, and gas-supply issues that keep the burner from lighting.
High-limit keeps tripping
A safety trip that shuts you down mid-rush, usually a bad high-limit, a probe reading wrong, or a real overheat cause to track down.
Oil leaks
Leaks at the drain valve, tank seams or fittings. I find the source and stop it, not just wipe it down.

I prioritize down fryers because they knock out so much of the menu. Most Philadelphia calls are same-day or next-morning, depending on the day and part availability.
My high-limit keeps tripping, can you fix that?
Yes. A tripping high-limit is either a bad safety, a probe reading wrong, or a real overheat cause. I find which one it is instead of just resetting it.
