Even heat, or it's not fixed
A convection oven lives and dies by airflow and temperature control. When bakes come out uneven, the usual suspects are the fan motor and blower wheel, a drifting thermostat or probe, worn door gaskets letting heat out, or on gas units the ignition and burner. I check all of it and calibrate the temperature so a 350 on the dial is actually 350 in the cavity.
