Combi Oven Repair in Philadelphia
A down combi backs up your whole production line. I diagnose the steam, airflow, drain and control problems that actually cause the fault, then fix the cause, not just the code on the display.
Rational, Alto-Shaam, Convotherm, Blodgett, UNOX, Henny Penny and Cleveland. Boiler and boilerless, gas and electric.
Combis are where most shops guess, I don't
A combi runs convection, steam and combination modes off one cavity, which means a single symptom can trace back to the boiler, the water feed, a sensor, the drain, or the board. A lot of techs swap the obvious part, hand you a bill, and hope. When it fails again a week later, you're back where you started.
I'm Ryan. I work on combis nearly every week and I take the time to find the actual cause. You get one person on the job from the phone call to the fix, a written quote before I touch anything, and a straight answer on whether a repair is worth it or the machine is aging out.
Common combi faults I track down
The symptoms kitchens call me about most, and what's usually behind them.
Weak or no steam
Usually the steam generator, fill/solenoid valve, level probe, or heavy scale in a boiler unit. On boilerless models it's often the injection valve or a clogged nozzle.
Error codes on the display
Rational Service codes, Convotherm and UNOX faults, temperature and drain-sensor errors. I read what the code means, then confirm it against the actual part before replacing anything.
Scale and hard-water damage
Scale wrecks boilers, probes and valves faster than anything else in Philly's water. I descale, check the softener/feed, and set you up so it doesn't keep recurring.
Uneven cooking & temperature swings
Slow preheat, hot spots, or product coming out inconsistent. Often the fan motor, a drifting core probe, a damper, or a mode-switch fault.
Drain errors & standing water
Clogged drains, failed drain valves, and water pooling in the cavity or under the unit. I clear it, find why it happened, and check the pump and sensors.
Door, seal & control problems
Steam leaking past a worn gasket, misaligned doors, faulty switches, boards that reboot mid-cook, or wiring damaged by heat and moisture.
Every combi configuration
Whatever's in your kitchen, I've most likely got hands-on time on it:
Boiler (steam generator)
Rational, Convotherm, Blodgett and Henny Penny boiler models, where descaling and boiler service matter most.
Boilerless (direct injection)
Alto-Shaam, UNOX, Cleveland and Blodgett injection units, nozzle, valve and airflow-focused diagnostics.
Gas-fired
Rational, Convotherm and Henny Penny gas combis: ignition, gas valves, flame sensing and burner faults.
Electric
Alto-Shaam, UNOX, Blodgett and Cleveland electric combis: elements, contactors and control boards.
Combi brands I service
Rational, Alto-Shaam, Convotherm, Blodgett, UNOX, Henny Penny and Cleveland, plus most other commercial combi lines. I'm factory-trained on Rational and Alto-Shaam, and I carry OEM parts. If your model isn't listed, send me the make and model, odds are I can still help, or point you to the right call on repair versus replacement.
A note on warranty: I'm an independent technician, not a manufacturer-authorized warranty depot. If your combi is still under factory warranty, check with the manufacturer first so you don't risk your coverage, and I'm glad to take a look once it's out of warranty.
Why kitchens call me for combis
One tech, root-cause first
I don't guess-and-swap. I show you the failed part, explain what happened, and tell you honestly if it's worth fixing.
The quoted price is the price
You approve a written number before I start. It doesn't move on you when the invoice shows up.
You hear from me
If a combi part is on backorder, you find out that day, not a month later after you've called to ask.
Where I work
Combi repair across Philadelphia and the surrounding counties: South Philly, Center City, Fishtown, Northern Liberties, University City and Manayunk, plus the Main Line, Delaware, Montgomery and Bucks County and parts of South Jersey. Most city calls are same-day or next-morning.
Not sure you're in range? Call or text and I'll tell you straight.
Combi oven repair FAQ
How fast can you get to a down combi?
I prioritize down combis because they take out so much of the menu. Most Philadelphia calls are same-day or next-morning, depending on the day and whether I've got the part on the truck.
Do you handle both boiler and boilerless models?
Yes, boiler and boilerless, gas and electric, with full diagnostics on steam, fans, drains and controls.
Can you sort out error codes and scale buildup?
That's a big part of the work. I read the code, confirm it against the actual component, descale the boiler and feed, and set up maintenance so the same fault doesn't keep coming back.
My combi is old, repair or replace?
I'll give you the honest math: what the repair costs, what's likely to fail next, and whether you're better off replacing. No pressure to buy a part that only buys you a month.
Combi throwing codes or losing steam?
Text me a photo of the display and I'll give you my honest read before I drive out.
